Black Beans and Rice

Remember that tiny history lesson at the top of this page. The name of this dish refers to the wars between the Moors (blacks) and the Spaniards (whites). This blend of black beans and white rice, is common on every Cuban table, every day, and it is a reminder of the Spanish influence on Cuba. Don't get me wrong there is no daily ritual, where Cubans reflect on the Spanish invasion of 500 years ago. But I just want to point out that history does not exist in a vacuum, it influences everything, including food. 2 cups of cooked white rice (1 cup of dry uncooked rice) 1 cup of cooked Cuban black beans (recipe above) Drain the beans. Does not have to be well drained, just get rid of the excess liquid. Stir with the white rice until evenly incorporated.

Easy Black Beans and Rice RecipePrint Options * Print (no photos) * Print (with photos) Ingredients * 1 cup uncooked white rice * 1 Tbsp olive oil * 1 small onion, chopped * 1/2 green bell pepper, thinly sliced * 1/2 red bell pepper, thinly sliced (for added flavor you can substitute roasted red bell peppers or some chopped pimentos) * 3 cloves minced garlic * 2 16-ounce cans of black beans, rinsed and drained * 2 Tbsp white vinegar * A few dashes of Tabasco or 1/4 teaspoon cayenne powder * 1 teaspoon dried oregano or 1 heaping Tbsp chopped fresh oregano * Salt and pepper to taste * Optional Lime wedges and cilantro for garnish Method 1 Cook rice according to package instructions. White rice usually takes 15 minutes to cook once the water is simmering, and 10 minutes to sit. 2 Heat oil in a large skillet on medium high. Sauté onions and bell peppers for 3-4 minutes, until just beginning to soften, then add garlic and sauté a minute more. Add the black beans, vinegar and Tabasco or cayenne. Bring to a boil, reduce heat, cover and simmer for 5 minutes. 3 Stir in rice and oregano. Add salt and pepper to taste.

Seems like an interesting way to revisit the past round the dinner. Getting such a reminder almost on a daily basis sounds fun. It is a recipe worth checking out

Crockpot Black Bean Chili RecipeIngredients: * 2 tablespoons vegetable oil * 6 garlic cloves, minced * 1 cup chopped onion * 1/4 to 1/2 teaspoon crushed red pepper flakes, or to taste * 1 tablespoon chili powder * 2 to 3 teaspoons ground cumin * 1 teaspoon dried leaf oregano * 1 bay leaf * 1 can (28 oz.) diced tomatoes in juice * 1 tablespoon soy sauce * 1 1/2 cups water * 1 can (6 oz.) tomato paste * 1 tablespoon red wine vinegar * 2 cans (16 ounces each) black beans, drained and rinsed * 2 cans (16 ounces each) beans -- pinto, garbanzo, great northern, kidney beans, etc. -- drained and rinsed Preparation: Heat the oil in a skillet and saute the onions, garlic and red pepper flakes. Cook 1 minute, then add chili powder and cumin and cook 2 minutes, stirring. Add this mixture to the slow cooker/Crock Pot along with all remaining ingredients except canned beans and garnishes. Stir well and cook on low all day. Stir in canned beans an hour or so before serving. Serve with garnishes.

Any recipe of another country is surely one that is worth checking out simply because sampling food from other locations in the world can easily be a job in itself that would, seemingly, never end. There are so many tastes for one to test and therefore, one should surely get their fill of every type that there is.

This is not my philosophy, however, I would never eat something that I am not familiar with, it would be too very peculiar.

I love to eat rice. Some of my favorite rice dish would include the oriental fried rice and the steamed rice match with yummy pork or beef or even fish toppings. Hmmm.. I would try to cook that Argentine black beans and rice. I think it is delicious too. Thanks for posting that recipe. I am quite sure that my husband and my son will love that recipe. Good day!

I am happy to hear that Helena. There are indeed lots of good tasting recipe here, particularly recipes from Argentina. I also love to eat rice and would love to know the different ways to prepare rice. I can say that I am excited to cook that black beans and rice. I am sure my daughter will love that dish since she is so picky with what she eats. Thanks.
