Beef Stew in a Pumpkin shell

2 pound of beef, cut in bite size cubes1 small onion, finely chopped 2 garlic cloves, minced 1 tablespoon olive oil 2 large tomatoes, coarsely chopped 1 green bell pepper; chopped 1 red bell pepper chopped 1 teaspoon black pepper 1 tablespoon oregano 2 teaspoon of basil 1 teaspoon crushed red pepper (optional) 1 teaspoon sugar 1 cup of dried apricots, chopped coarsely if whole and large 3 medium potatoes, peeled and diced 3 sweet potatoes, peeled and diced 2 cups of beef broth 1 medium large Pumpkin butter or margarine; melted 1/4 c Dry sherry 1 pound of whole kernel corn, drained and/or defrosted In the olive oil brown the beef with the onion and garlic. Add all the remaining ingredients, except the corn, sherry and pumpkin of course. Simmer for a 1 hour, covered. Cut the top off the pumpkin and discard. Scoop out the seeds and stringy membrane, and discard them as well. You could toast the pumpkin seeds in the oven for a snack if you like, but they are not used in this recipe. Brush the inside of the pumpkin with butter and sprinkle lightly with salt and pepper. Stir in the stew, sherry and corn. Bake the stew containing pumpkin at 325F for about an hour, or until the pumpkin is tender. When serving, scoop out some pumpkin along with the stew.

Do you want any recipes, or just ones pertaining to beef stew in a pumpkin shell? Here is a little recipe for you anyhow.. Korean Beef Dressing 2 c soy 6 T Siracha 4 T Sambal Olek 6 T Sweet Chili sauce for Chicken 3 T Sesame Oil 1/2 tsp Chili flakes 4T Ground Garlic 2 T Ground fresh ginger 1 cup water Marinate the beef in some of the dressing and grill Place over a green salad adding some sliced vegetables such as Carrots, celery and cucumbers. Toss the greens and place on a plate and then slice the warm grilled beef and place over , garnish with some peanuts. ENJOY!

Here is Net Scourge again bringing you quality recipes from the web and this time it is a Filipino Beef Stew Recipe:Filipino-style Beef Stew Ingredients: Makes 6 servings) * 1 1/2 lb. boneless beef stew meat * 2 small onions, chopped * 2 medium tomatoes, chopped * 1/2 cup MAGGI TASTE OF ASIA Cooking Soy Sauce * 1/2 to 1 cup water * 1 tablespoon MAGGI TASTE OF ASIA Chili Sauce * 1 bay leaf * 1/2 green bell pepper, chopped * 1/2 red bell pepper, chopped * 2 medium carrots, sliced * 2 medium potatoes, cubed * Hot cooked rice Directions: PLACE beef, onions, tomatoes, soy sauce, water, chili sauce and bay leaf in large saucepan. Bring to a boil over medium-high heat; reduce heat to medium-low. Cover; cook for 40 minutes. Add bell peppers, carrots and potatoes; cover. Cook for an additional 15 to 20 minutes or until sauce has thickened and beef is fork tender. Serve with hot cooked rice. Prep Time (Min): 20 Cook Time (Min): 60

MechadoFilipino Beef Stew Ingredients: 2 - 3 lbs. Beef with bones preferred or boneless chuck roast (sliced in cubes) 8 Cloves garlic (chopped) 1 Medium onion (chopped) 1 Large red bell pepper (half chopped and half cube sliced) 1 Medium canned tomato sauce 1 Piece bay leaf ˝ Cup Silver Swan Soy Sauce* 2 Cubes of beef bouillon 4 Medium potatoes (peeled and cut into quarters) Optional: May also add celery and carrots (which I did, as shown in next photo).
